What I Made for Dinner: July 21, 2010

Chicken shwarma burgers with tzatziki, Greek salad.

My friend Nikki and her adorable family joined us for dinner, as well as swimming and water-balloon fights--dinner was a pale cousin to all the other activities.  They are visiting from California, which is so far away and it's really too bad because this morning Eli keeps asking when he can see his new friends again.  Hopefully it will be soon.

Max's Birthday Chocolate Chip Cookies (makes about 15 large cookies)

2 1/4 cup all-purpose flour
1/2 t. baking soda
1 t. salt
3/4 cup butter, melted
1 cup golden or dark brown sugar
1/2 cup white sugar
1 T. vanilla
1 egg + 1 egg yolk
1 1/3 cup best-quality semi-sweet chocolate chips

Preheat oven to 375.

Stir together flour, baking soda, and salt. Set aside.

In a large bowl, stir together butter, sugars, and vanilla. Add egg and yolk.  Beat well to make sure the egg is evenly distributed.  Stir in the dry ingredients.  Fold in the chocolate chips until incorporated.  Drop batter in scant 1/4 cup rounds onto a lined baking sheet. Bake 10-12 minutes, just until the edges begin to turn golden. They'll seem underdone but they're ready.  Cool on a rack.
