What I Made for Dinner: March 9, 2010

Butter-roasted salmon with mushroom risotto.

This is possibly the stupidest possible dinner to try to make on a weeknight.  That is all.

  1. You will laugh, but try it - microwave. Keith taught me that you can actually make good salmon in there.

  3. Amy: I am forbidden by our marriage contract to microwave fish.

    Niobe: It is delicious, but what wouldn't be roasted in butter, right? It's also pretty easy. You melt the butter, put the salmon skin-up in a roasting pan, spoon the butter over the salmon, and roast it at 500 for about ten minutes, turning the fish over halfway through. Do not walk away during the roasting to change a diaper or to check someone's spelling, because the fish will know if you're not looking and it will burn out of spite.
